Chocolate Avocado Mousse
Serves: 1-2 servings
  • 1 large ripe avocado
  • 1/4 cup raw cacao powder (or unsweetened cocoa)
  • 1/4 cup coconut milk or almond milk
  • 2 tsp stevia (or other natural sweetener like honey or pure maple syrup)
  • 1 tsp natural vanilla extract
  1. Add the avocado, cocao powder, almond/coconut milk, stevia (or other sweetener), and vanilla into a food processor and blitz till smooth.
  2. Pile the mixture into one or two dishes and put in the fridge to chill.
  3. When ready to eat, serve with toasted almonds or berries (my favourite).
