Smoothies – you gotta love ’em. So simple to make; so adaptable, so healthy. I’m on a post-Christmas health kick – believe me, it’s needed. The pounds have piled on and I’m about as energetic as a sloth. So it’s game on – a green smoothie a day for 30 days.
The impetus for this virtuous food campaign comes from Simple Green Smoothies and their 30 Day Green Smoothie Challenge. I would have never known about this fabulous site had it not been for a catch-up with my friend Michelle who was already a week into the challenge. Once you join up (it’s free by the way) you’re sent weekly smoothie recipes which, for those who aren’t familiar with smoothie making, takes the guess work out of it all. And I did stick with the recipes verbatim for a few days but found myself straying from the menu simply because I had certain ingredients in abundance which needed using.
On this particular occasion I had some left-over strawberries, mango and fresh pineapple that were close to their use-by date. To that I added some banana and a good handful of spinach. I poured in some coconut water and was about to blend it together when I noticed how absolutely beautiful it looked all stacked up in layers of glorious colour! So out came the camera for a photo shoot! And that was going to be the end of it, but once I blended it all up, it truly was deliciously yummy and I just had to share! So, a post was born.
You can follow this recipe of course, or you can simply make up your own, based on whatever you have lying about – you really can’t go wrong so long as you have a reasonable balance of vegetable to fruit and enough liquid to make it drinkable. Basically, the rule of thumb for one serving is 1 cup of greens, 1 cup of liquid and 1.5 cups of fruit. Simple eh?

And once the month is up, I’m certain I’ll be continuing to enjoy smoothies at least several times a week from then on. Enjoy!
GREEN TROPPO-LICIOUS SMOOTHIE
- 1 Blender
- 1 cup spinach
- 1/2 cup coconut water
- 1/2 cup pure mineral water (add more if needed)
- 1/2 cup mango (peeled and chopped roughly)
- 1/4 cup strawberries (chopped roughly)
- 1/4 cup pineapple (chopped roughly)
- 1 small banana or 1/2 large banana (peeled and chopped roughly)
- Put all the ingredients into a high-powered blender and blitz away. If the mixture is too thick, simply add more water.
- Pour into a glass and enjoy!
